Knife Green

Knife Green

Bobbie was reminiscing about her grandmother and those little green apple turnover cookies. Bobbie would beg her to make them so she could serve them during her tea party with one of her best friends, Teddy Polk-A-Dots. Bobbie knew how to cook those little cookies before she was allowed to hold a knife. She remembers her grandmother telling her, "You have to use Granny Smith apples Bobbie because the cookies won't taste as sweet without the tartness of these apples. Remember that. It's the most important part of making these cookies."

Bobbie slowly moved her head up at the sky blinking at the bright sunlight, "Just like life Grandma. Got to have that tart to make it that much sweeter. Thanks for the advice. I miss you so much Grandma." She knew that she had a clean shirt on today that was a definite improvement from yesterday. She was exactly a lion yet but she had strength, the confidence was lacking but one step at a time. Guitars and a certain room flashed through her brain and she flopped down helplessly in her porch rocker.

She gave up and didn't resist. The bittersweet memories flooded over and through her. She was facing the wall in her little cottage. She could feel the bed beneath her and let the cool air from the air float in through the window and over her. She heard that front door close and she shut her eyes. Bobbie was curious. She knew that you could always tell how much a man loved you by how he treated you when you slept. So, she thought she would try it out. She felt the pressure change on the bed and she lay still. She felt his arms circle around her and he kissed her cheek ever so softly. Never before the moment had she felt so much and peace and love flow over her in a strong wave with no abating. She could feel the same exuding from him. They were safe and with each other.

She turned around and he kissed her softly on the lips. "The night grows bitter, the stars have lost their glitter. That great beginning has seen a final ending, with hope....," Judy Garland was singing her sweet song in the background. The emotions within Bobbie were almost too much to handle.

There were very few things she remembered as well as his face laying on that pillow. That day she memorized every little feature in his face, every little mole and mark. His blond hair, his lips, his closed eyes....she fell in love all over again when she saw his face. Passion, fear, and purpose became hers all over again. Her heart just couldn't contain it....

Two months of those lazy afternoons and it became night, permanently. All over what? An issue over heaven and hell, fear and hope, friendship and love. She knew for the moment that she was down for the count. She didn't expect to forget him and what he had meant, but she did expect to be able to think on him with happiness and tenderness and without sadness or bitterness.

It would take some time certainly, but she did know that someday she would look around the corner and find the man who possessed some of the wonderful characteristics of those lazy afternoons. This one though, when he looked into her he would see heaven and hell, fear and hope, friendship and love and not let her go. Not for a million. It could be today....for now it is just one step at a time.

"Fresh Green Apple Turnover Cookies"*

Ingredients: 1 and 1/3 cups of ricotta cheese, 1/3 cup of confectioners' sugar, 1 cup of all-purpose flour, 1 cup of whole wheat flour, 2 large eggs, 1 tsp of baking powder, 1 tsp of fresh lemon juice, ¼ tsp of salt, zest of one lemon plus a tsp of zest, 1-2 tbs of non-fat milk, 1/3 cup of Splenda, 1/3 cup of vegetable oil, 1/3 cup of sugar, ¼ tsp of vanilla extract, 1 tbs plus 1/3 cup of margarine, 3 medium Granny Smith apples peeled cored and cubed, and 3 tbs of golden raisins.

1) Mix the cheese, the flours, baking powder, salt, vegetable oil, milk, 1/6 cup of sugar, 1/6 cup of Splenda, 1 egg, 1 tsp of lemon zest grated, vanilla extract, and 1/3 cup of margarine in a large mixing bowl.

2) Plump the raisins in hot water for 10 minutes. Drain well and pat dry with paper towels.

3) Pre-heat the oven to 350 degrees. Set out a couple of greased cookie sheets.

4) Mix the apples, remaining margarine, remaining sugar, remaining Splenda, remaining lemon zest, and the juice in a large saucepan over low heat. Once it starts getting bubbly, simmer for about 5 minutes or until the apples begin to soften. Stir in the raisins and let them cool completely. Discard the lemon zest.

5) Roll the dough out to ¼ inch thick. Use a round 3 inch cookie cutter to stamp out circles. Spread with a tsp of the apple filling leaving a ½ inch border around the edge. Brush the border with the beaten egg and fold over pressing firmly. Brush the tops with the remaining egg. Arrange on a cookies sheet. Bake for about 20 minutes or until golden brown. Cool on the sheet for 2 minutes and then transfer to wire racks to cool. Dust with the confectioners' sugar.

6) Enjoy these delicious cookies with all the wonderful sweetness of life.

I would like to write about urban survival knives. I always put a pocket knife in my pocket before leaving home. I have spent a lot of time in some very rough neighborhoods since I grew up in a big city. I was in the remodeling business and sometimes, as they used say you take the good with the bad. Fortunately I never had an incident that required the use of my knife. I honestly think that common sense and street smarts are far better than any weapon. But with that being said I still liked the "safe feeling" from carrying my varieties of pocket knives. Besides pocket knives can be used a tools as well.

I got a laugh from the movie "Crocodile Dundee" when his girlfriend Sue and he are menaced by a trio of would be muggers. When the thief ask for their wallets and pulls out a knife (I guess about a four inch blade) His girlfriend says, "Mick give him your wallet." He replies "what for?". She says, "he's got a knife." Dundee say's, "that's not a knife" and pulls out a knife about 12 inches long, and says "that's a knife." Pretty funny stuff. Of course it is the movie's, but that is one serious knife just the same. It appears to be a Bowie Knife. At least it has the same size, shape and look. What caught my interest also was the sheath used in the movie. It also seemed that he used some kind of carrying strap as well. Either way that is a beautiful knife. More suited for the outdoors, camping, hunting or fishing.

Pocket knives are easy to hide and make an excellent choice for carrying in the urban environment. All knives are good for close inside work. Laws regarding the carrying and concealment of knives varies state to state. The use of a switchblade or butterfly knife has pretty much been banned in all 50 states. Common pocket knives are considered more as tools and not seen as dangerous weapons. That's another good reason I like to carry a pocket knife.

Oboe Reed Knife Sharpening? What happens if you use the coarse side of the stone?

I am sharpening my oboe reed knife right now, and it does not seem to be getting any sharper. I was wondering if it is bad to use the coarse side of the stone, rather than the fine side that i am using right now!

With knife sharpening in general, the coarse side is only used when a knife is really dull as it takes a good deal of steel off in the process. The smoother side is for keeping an already pretty sharp blade at perfect sharpness. So if the smooth side isn't working for you then go back to the coarse side and then back to the smoother side.

Knife Folding

Knife Folding
I just bought a titanium folding camping spork. Is there a knife that works the same way?

I'm looking for something that would work for food, not a pocket knife. I want something simple that works like the folding spork. Does anyone know of any?

No, you can't have a knife that is bare and has a snap-on handle. The knife blade always has to be sheathed, either in a separate sheath or by folding. The closest thing to that folding spork is something like the CRKT KISS knife: http://www.crkt.com/kiss.html

A tactical knife is a high performance knife; it's a type of knife the user can employ quickly and forcefully. It may be used as an everyday tool or a survival weapon; it can have a fixed or folding blade. Quality tactical knives are very sharp, in order to accomplish their major purpose of cutting or separating one thing from other. There's no strict definition of what is and what is not a tactical knife because what is tactical for a suburban civilian is different from what is tactical for person in the military. The basic requirement is that you can get to it, open it, and use it quickly and easily with one hand.

Because of the great variety of tactical knives, you need to consider a number of options before deciding what knife is best for you and your purposes.

Plain vs. Serrated Edge. The application determines whether a plain or serrated edge will do the job better. A plain edge is better for push cuts, where you push the blade through whatever you are cutting. A plain edge is also the better choice when accuracy, clean cuts, and extreme control are required to do the job. The serrated edge works better with slicing cuts, where you make the cut by dragging the edge of the blade.

Blade Shapes. The clip, modified clip, and drop point are the most popular blade shapes. The sharp point of the clip blade is ideal for detail work, but not very strong. The modified clip comes in a variety of shapes; it's good for high-tech knives. A drop point blade has a thick point that is good for heavier jobs, but does not penetrate easily.

Automatic knives. Also known as switchblades, automatic knives open at the push of a button, a particularly important feature if you are unable to access and open a traditional knife. If you expect to be in situations where you can't put down something in order to open up your knife, an automatic knife may be the best choice.

Survival vs. Rescue Knife. Survival knives have sharp points and work well for general purposes. They usually have clip blades and are double bladed. The blunt tips of rescue knives make it safer for rescuers to cut seatbelts or clothing without injuring the victims. Some rescue knives even have glass breakers to assist in automobile rescues.

Pocket vs. Folding Knife. A pocketknife is a small knife with a number of blades, small enough to fit in a pocket, like a Swiss Army knife. It folds, but general does not have a locking mechanism. A folding knife is larger, usually has only one blade, and has a locking mechanism and a clip for carrying.

There is considerable crossover when it comes to knife types and uses. A traditional fixed blade hunting knife, for example, can be a fine knife for everyday use. Many tactical knives serve multiple purposes. When you buy a knife, consider the quality and what you want the knife to do.
