Hi,
There are several great knives out there so it's really going to depend on your tastes. You can get anything from pretty to practical.
Gerber, Buck, Cold Steel, Columbia etc... all produce great knives. Personally I take a Cold Steel hunter with me in the field.

William Henry makes the finest knives on the planet, they have a relatively new steel called ZDP-189 available in some of their models that is absolutely incredible. I used mine to skin 14 bucks and gut 11 of them last year and never touched a stone to the blade, it's still as sharp as the day I got it. Plus, their knives are works of art, if you get him one, it is usefull, and heirloom quality. They start at about $300. If that's too spendy, Kershaw and Spyderco also make knives with the same steel, for less than $100, but nowhere near as attractive of knives.

I'd suggest something that has a "gut hook." It helps in field dressing the animal. Here are some good ones from:
Boker:http://www.eknifeworks.com/webapp/eComme…
Gerber:http://www.eknifeworks.com/webapp/eComme…
Knives of Alaska:http://www.eknifeworks.com/webapp/eComme…
